Ingredients
(makes about 1 1/2 cup)
1 egg yolk
3 tbsp fresh lemon or lime juice
1/2 tsp coarse sea salt (or regular salt)
1 cup sunflower oil
Method
Put the first 3 items in blender and blend on medium speed. Then slowly, while the blender is still on, start pouring the oil in a very thin, steady stream.
Don't stop the blender until you reach a thick consistency (mayonnaise)
Keep refrigerated and use within 3-4 days
